A major Cruise Line is looking for an Executive Sous Chef to join their fleet of large and luxurious ships.
Responsibilities:
- Help to manage the culinary activities in their state-of-the-art galleys
- Maintain food cost at reasonable levels, without affecting quality or standards
- Prepare international cuisine in multiple venues
- Enforce USPH and HACCP procedures for sanitation and cleanliness
- Monitoring workstations and staff for adherence to all procedures
- Manage and train large culinary staff numbers to consistently meet performance standards
Requirements:
- Managed a multicultural team in an upscale hotel, cruise ship, restaurant, or high-volume food service facility
French cuisine knowledge and understanding, including knowing how to make the 6 mother sauces and demi-glace* Cruise ship experience will be beneficial but is not essential
- Must be COVID vaccinated or be prepared to get it
- Prepared to be away for home for several months at a time
